Chef Gary has always had a passion for food and cooking. Our classes here at Cedars are small (2 - 6 guests) and designed to help you be more comfortable in the kitchen and learn about ingredients and techniques to make your time in the kitchen more enjoyable. We will always focus on local ingredients and helping make our local producers sustainable. We are a member of the Grey County Chefs Forum and the Horse and Buggy Trail.
We do NOT have a set Schedule for our classes. We will provide any class for as few as 2 guests. You pick the date and you pick the course we will look after the rest! We can provide our classes here or in your kitchen, whichever you prefer. We also design custom courses for you and even a Culinary party where each of your guests can make a part of the meal. We welcome you to our new series and welcome your comments.
Gourmet Menu Selections
We have some great menus for you to enjoy while you are here at Cedars! Our Gourmet menus are prepared by Chef Gary and delivered to your cottage where you will finish the cooking on your schedule. This is a great way to enjoy fresh local specialties while having some fun in the kitchen. All of our menus have step by step instructions and Chef Gary is as close as the phone if you need some direction.

Culinary Boot Camp - 59.00pp/class or 99.00 for the 2 class series
This 2 week series will help you become a more proficient and experienced Chef at home. It does not matter what your present skill level is. We will show you some professional techniques to help you in the kitchen
We will introduce some basic techniques and skills that will benefit you in future classes and for many years to come in your own kitchen. When working in the kitchen, it is important to know that your hands are your most important tools; we will teach you how to work with the most common kitchen knives while learning to properly slice, dice, chop and gain confidence with your knives. We will also discuss basic cooking methods, seasonings, flavorings and herbs.
Class 1 – Knife skills, herbs and sauces
“A great sauce defines a great chef”… these are the words of famed French Chef Bernard Point. A properly prepared sauce can bring a dish to new levels of excellence or to new levels of dissatisfaction. Let our chef show you the secrets of the professional Saucier while preparing leading sauces such as: Béchamel, Veloute, Espagnole, Tomato and the famous Hollandaise. Our chef will also discuss which dishes these sauces compliment and those that they do not!
Class 2 cooking techniques -
Now we will learn some cooking techniques and methods to help you while preparing some beef and chicken dishes. We will touch on food safety as well as how to prepare less expensive cuts at home
Local Foods – 199.00 per class for 2 guests - 79.00 each additional guest -
This class is for the True Locavore! We will begin at the Flesherton Farmers Market for a tutored tour and to get some great local ingredients. Then we head back to the kitchen to create a meal to remember.
Possibilities are: Squash Bisque, Stuffed Pork Tenderloin with maple Brussel Sprouts Menu based on available product.
Tapas...Spanish for Hors Dóeuvres – 69.00
This is great class to get ready for your next gathering. The Spanish are masters of bite sized morsels and we will show you some of the specialties. Some Hors Dóeuvres you can make ahead and some you will make right in front of your guests...because we all know the best parties are in the kitchen!
Couples Date Night A Night in Paris – 199.00/couple
No matter if you are just dating or have been married for years, here is the chance for a fun evening to try out some new recipes and have a nice dinner with your “better half”.
Our evening will start with our chef helping you to prepare a gourmet dinner for 2, you’ll both have to work at this, but we will take care of the clean-up!
After your meal comes together, we will set your table, light the candles and you get to enjoy each others company and the gourmet dinner you helped prepare!
A great sequel to our breads course, now you can learn how to make perfect pie dough and then we’ll teach you about great fruit pies and savoury tortiere, (a Canadian icon).

For this event, you had better come hungry and ready to learn the impressive techniques of the art of Flambé! After this evening, you will be able to prepare a gourmet dinner that will impress your guests and satisfy their palettes! We will be making 2 traditional flambéed dishes : the French dish “Steak Diane” Flambéed tableside and Bananas Foster.
